Job Description:
The NDSU Meat Science meat laboratory manager provides services for faculty, graduate assistants, and undergraduates through teaching, research and extension activities, and the general public through meat sales at both the retail and wholesale levels.  The candidate will be expected to make positive contribution to research, educational, and outreach programs. The candidate will assist faculty who are focused on meat science and muscle physiology research activities both on and off campus. If qualified, the meat lab manager will have the opportunity to receive supplementary pay for assuming the teaching responsibilities as assigned. The person in this position will be responsible for all aspects of the management and operation of the NDSU Meat Science meat laboratory. The candidate must have a working knowledge of red-meat species (cattle, sheep, and hogs) anatomy, slaughter and processing techniques. This position comes with an opportunity to work on an advance degree, if desired. Some travel is required.

Minimum Qualifications:
*Bachelor of Animal Science, or closely related field
*Experience with meat/meat product sales and marketing
*Experience supervising hourly employees
*Experience with slaughter, processing, and handling of red-meat livestock species (cattle, sheep, hogs)
*Experience with the use of computer software including financial management programs, data handling spreadsheets, and word processing
*Excellent interpersonal skills and the ability to work effectively as part of a diverse team
*Good written and oral communication skills

Preferred Qualifications:
*Hold or currently pursuing a Master of Science degree in Animal Science or related field
*Demonstrate excellence in public speaking (teaching, extension/outreach, educational demonstrations)
*Experience working in a research setting
*Experience with biological sample collection and analysis
*Demonstrate an understanding of the principles of HACCP
