Job Description:
The NDSU Meat Science meat laboratory manager provides services for faculty, staff, graduate assistants, and undergraduates for teaching, research and extension activities, and to the general public through meat sales at both the retail and wholesale levels.  The successful candidate will make positive contribution to research, educational, and outreach programs.  The successful candidate will assist faculty conducting activities both on and off campus. If qualified, the meat lab manager will have the opportunity to receive supplementary pay for assuming teaching responsibilities as assigned. The meat lab manager is responsible for all aspects of the management and operation of the NDSU Meat Science meat laboratory. The successful candidate must have the ability to work with livestock species and perform slaughter and processing. This position comes with an opportunity to work on an advanced degree if desired. Some travel (< 10%) may be required.

$55,000+/year commensurate with experience

Minimum Qualifications:
*Bachelor’s degree in Animal Science, Food Science, Agriculture, or related field
*Knowledge or ability to work with meat and meat product sales and marketing
*Ability to supervise hourly employees
*Ability to perform slaughter, processing, and handling of red-meat livestock species (cattle, sheep, hogs)
*Ability to use computer software including financial management programs, spreadsheets, and word processing
*Excellent interpersonal skills and the ability to work effectively as part of a diverse team
*Excellent written and oral communication skills

Preferred Qualifications
*Hold or currently pursuing a Master of Science degree in Animal Sciences or related field
*Experience with slaughter and butchering of livestock species such as cattle, pigs, and sheep and value-added meat processing
*Experience with classroom and laboratory teaching, extension/outreach programs, and educational demonstrations
*Experience with employee management
*Experience working in a research setting
*Knowledge of food safety systems and the principles of HACCP
